Cinnamon Streusel Coffee Cake Muffins

Ingredients

Muffins:

  • 1 1/2 c whole wheat pastry flour
  • 1/2 c packed brown sugar
  • 2 t baking powder
  • 1 1/2 t cinnamon
  • 1/4 t baking soda
  • 1/4 t salt
  • 3/4 c milk (vanilla coconut or almond milk works great)
  • 1 1/2 t vanilla extract
  • 1/3 c coconut oil, melted
  • 2 eggs (or 1/2 c egg substitute)

Streusel:

  • 1/3 c cane sugar
  • 1/3 c packed brown sugar
  • 1 t cinnamon
  • 1/4 t salt
  • 1/2 c coconut oil, melted
  • 1 1/2 c whole wheat pastry flour

Instructions

  1. Mix the streusel by combining all dry ingredients, then pouring in the coconut oil. Mix it all together then use a fork to break it into crumbles. Set aside.
  2. In another bowl combine the dry muffin ingredients. Add all the wet ingredients and mix.
  3. Line a muffin tin with 12 papers. Divide the batter evenly to fill all cups about 3/4 full.
  4. Divide the streusel evenly to cover all 12 muffins.
  5. Bake about 20 minutes at 375 degrees. They’re done when a toothpick comes out clean when inserted into the center of a muffin.
