Gingersnaps

Ingredients

  • 3/4 c coconut oil, melted
  • 1 egg or 1/4 c egg beaters
  • 3/4 c cane sugar
  • 1/4 c molasses
  • 2 c white wheat flour
  • 2 t baking soda
  • 1 t ginger
  • 1 t cinnamon
  • 1/2 t cloves
  • 1/2 t nutmeg
  • 1/2 t sea salt

Directions

  1. Cream together coconut oil and cane sugar.
  2. Add egg and molasses then mix in spices, soda and salt.
  3. Add the flour last.
  4. Scoop onto a greased cookie sheet or silpat using a small ice cream scoop. Sprinkle with a little sugar.
  5. Bake at 350 degrees for 8-10 minutes longer if you like crunchy Ginger Snaps. Let cool for 3-5 minutes before removing from pan to cooling rack.
