Whole Wheat Greek Yogurt Pancakes

Ingredients:

  • 1 1/2 c whole wheat pastry flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup plain greek yogurt
  • 3/4 c So Delicious coconut milk (or milk of your choice)
  • 1/4 c egg beaters (or 1 egg)
  • 2 T pure maple syrup
  • 1/2 t vanilla extract

Instructions:

  1. In a mixer combine the wet ingredients: yogurt, milk, egg, syrup and vanilla.
  2. Add dry ingredients: flour, baking powder, baking soda and salt.
  3. Let the batter sit for about 10 minutes.
  4. Grease your frying pan/griddle with coconut oil and spoon on batter. You may need to spread the batter by shaking the pan slightly (it’s pretty thick).
  5. Cook for 3-4 minutes per side or until golden brown.
