Homemade Marshmallows (no HFCS)

Ingredients:

  • 2 Tbsp gelatin
  • 1/2 cup cold water
  • 2 cups cane sugar
  • Another 1/2 cup of cold water
  • Pinch of salt
  • 2 tsp vanilla extract

Instructions

  1. Coat the bottom and sides of an 8-inch square pan with coconut oil.
  2. Soak gelatin in 1/2 cup cold water in a small bowl.
  3. In a medium saucepan, combine the sugar and 1/2 cup water, cooking over medium heat and stirring until fully dissolved.
  4. Add the gelatin mixture and bring to a boil, stirring to combine.
  5. Pour this into a mixing bowl and let cool for a few minutes. Add the salt and vanilla.
  6. With an electric mixer, beat for 10-15 minutes, until it doubles in volume.
  7. Pour into your square pan, and set aside until cool.
  8. Coat the top with cornstarch or powdered sugar. Turn out onto a cutting board and coat the bottom with cornstarch or powdered sugar as well.
  9. Cut into 1-2 inch squares, and roll in powdered sugar to coat the remaining sticky sides.
