Caramel Corn


  • 3 Tbsp flavorless oil
  • 1/2 cup brown rice syrup
  • 1/2 cup pure maple syrup
  • 1/2 tsp salt
  • about 12 cups of popped corn (1/2 cup kernels)
  • 1/2 cup pecans, cashews or nuts of your choice chopped(optional)

Heat oil, brown rice syrup, maple syrup and salt in a saucepan. Once the sauce is combined and thin (6-8 minutes) pour it over the popped popcorn and stir it up. Let it sit for about 3 minutes then add the chopped nuts and stir again.

Spread onto wax paper or onto a cooling rack (with a small grid pattern) to dry.
