Pumpkin Spice Protein Pancakes

I had originally tried a recipe found on The Super Sisters website, but had a very hard time getting the pancakes to stay together when cooking, so I added oats. Their recipe was also for one serving, but when I open a can of pumpkin I want to use the entire thing!

  • 1 can pure pumpkin
  • 3 scoops protein powder (I used vanilla)
  • 3 whole eggs
  • 1 1/2 cups almond or coconut milk
  • 3/4 tsp baking soda
  • 1 Tbsp cinnamon
  • 1 Tbsp pumpkin pie spice
  • 1 Tbsp apple cider vinegar
  • 1 cup quick cooking oats, or steel cut oats (put through a blender first)

I put all the ingredients in a food processor and mixed them up. I used an ice cream scoop to measure out the batter, and filled it about halfways.

We top ours with butter and 100% pure maple syrup. I think I made 15-18 pancakes that were about 4 inches across.
